4.00pm Gales and Fullers masterclass with Master Brewer John Keeling, matching beer with food. Tickets £6

Saturday 9 September
11.00am Cookery demonstration with Denis Spencer of Spencers Restaurant & Brasserie – fillets of skate wing pan fried in breadcrumbs and baked Alaska. Tickets £5

12noon Hidalgo Sherry masterclass, with Xavier Hidalgo presenting a range of his sherries. Tickets £6

1.00pm The 47th Regiment, Royal Artillery cookery demo with chefs from Africa, Nepal and UK. Tickets £5

2.00pm Concha y Toro masterclass with aromatic wines from Chile. Tickets £6

3.00pm & 4.00pm Young Chef of the Year final with Shane Webb from Highbury College & Matt Breeson from Chichester College. Tickets £4 covering both sessions

Sunday 10 September

12noon Cookery demonstration with Michelin-starred chef Ramon Farthing of 36 On the Quay, Restaurant with Rooms – dishes with a champagne twist. Tickets £5

1.00pm Grove Mill masterclass with wine maker Dave Pierce presenting wines from New Zealand. Tickets £6

2.00pm Montezumas Chocolates cookery demonstration with Simon Pattinson creating fresh cream truffles. Tickets £5

3.00pm Yalumba masterclass with wines from Australia’s ‘Mediterranean Garden’. Tickets £6

4.00pm Cookery demonstration with Lawrence Murphy of Fat Olives teaming up with Alistair Gibson and Hidalgo Sherry – sea bass, tomato mussel & Manzanilla sauce; fig & Pedro Ximenz cheesecake. Tickets £6
